Hospital cafeterias serve less than 20% of the food prepared – the majority has to be prescribed, prepared and carted to the patient. Assisted Living facilities have more in common with restaurants as more residents have freedom to choose their meals in the main dining room. Still, over 50% of meals are prepared and carted elsewhere.
